Cinco • de • Mayo

Hola Beauties!

Today is most definitely Cinco de Mayo. Which of course means, delicious food. Well, that's what is means in my house anyway. After recently (2 days ago) moving back in with my parents for the summer, all of my stuff is a little disordered at the moment. I scrounged through my mom's pantry and decided to throw something together and hope that it would work out. Def a "fingers crossed" situation.

Anyhoo! I made Mexican Lentils. Totes amaze. These are the perfect meal or side dish. The recipe is also extremely flexible. Make it your own. Make it delicious.

One Pot Mexican Lentils

• 1 can sweet corn
• 1 can black beans
• 1 mini red, orange and yellow bell pepper
• 1/2 C. chopped red onion
• 1 box (32 oz.) Mexican Tortilla broth
• 1 bag (16 oz.) lentils
• 1 can Original Ro*Tel tomatoes

Directions

 Drain corn and pour into a medium bowl.


Drain black beans and add to corn.


Chop mini bell peppers and add to corn and black beans


Chop red onion and add to mixture.


Pour broth into a large pot.


Add lentils to broth.


Add the corn, black bean, pepper, onion mixture to pot.


Cover and let the mixture cook on medium heat. Stirring every once in a while, until all of the liquid is absorbed. 


Add the can of orginal Ro*tel tomatoes to the pot and fold them in. 


Allow the mixture to cool slightly and serve on a platter or straight from the pot. You decide!
